In the years she has spent in Taiwan, Manran says she has met many great people. She discovered a similarity between Taiwan and Italy, that is the hospitable and friendly locals. It wasn’t difficult for her to blend in with the Taiwanese lifestyle. Combining her love for cooking and the top quality Taitung fresh produce, Manran was able to create even more innovative vegan dishes. On her quest to find all types of organic produce, Manran also became buddies with farmers all around Taiwan.

Manran’s cuisine combines Italian culinary skills and Taiwanese local ingredients to produce stunning dishes one after another. While searching for unique ingredients, she finds many connections between the ingredients and the land. Manran loves gracilaria, which are the tender leafy parts of the chayote. Gracilaria is perfect for salads, pair it with Italian olive oil for a refreshing and crispy bite. The salad of the day contains romaine, mango, bitter melon, rocket, plum vinegar, carrots, cherry tomatoes, Taiwanese sea salt, and extra virgin olive oil. Order this salad with some grilled vegetables and Italian risotto for a satisfying meal anyone would fall in love with.

The sustainable concept is applicable to more than just cuisine, it should be used in our attitude towards life. Manran shares her life philosophy: she believes that all one needs to survive in this world is clean air, clean water, and safe and natural food ingredients.
