The streams and ocean give the aborigines endless ingredients to enjoy. They adjust the cuisines based on the seasons to use the most appropriate local ingredients in Taitung. Mountain food, wild game cuisines, and seafood are the characteristics of aboriginal cuisines, which include hotpot using heated stones and metal leaves, vegetables growing in the wild, salted grilled cuisines, traditional glutinous rice in bamboo tubes, the rice “A-bai” only available during festivals or holidays, and finally, the special rice wine.
