2021 Taitung Slow Food Festival – Fermented Plate
The second round of 2021 Taitung Slow Food Festival- Fermented Plate will be kicking off on Oct. 16-17! The theme of this year is the fermented food in Taitung. Fermentation takes time, just like the event that was scheduled to take place in the summer but postponed to October due to the pandemic. This time has allowed everyone to ferment and settle, in preparation for the fall to ferment together!

This time has allowed everyone to ferment and settle, in preparation for the fall to ferment together!
The method of preserving food through fermentation has been used by mankind as early as 6000 BC. It reflects the progress of man towards civilization. This method not only preserves the food, it even makes it more suitable for our digestion and greatly enhances the flavor and textures of the foods.
Taitung cuisine has a long history of fermentation and has been used in different tribes and cultures. For example, the Hakka specializes in using fermentation techniques with sun and air drying to prolong the shelf life of vegetables, processing them into different types of pickled vegetables. The Amis make Siraw (pickled meat) and Fukah (pickled bamboo) to make dishes for honored guests. Rice wine and millet wine made from Koji rice are fragrant and smooth, the recipe is passed down from generation to generation.
Fall is the season of harvest. The Taitung Slow Food Festival invites vendors and restaurants around the valley, coastline, south link, and city in Taitung to share their family fermentation recipes and memories. If you would like to experience Taitung’s fermentation culture and enjoy unique and delicious fermented dishes, make sure you don’t miss Slow Food Festival this year!
Gentle Reminder: Slow Food Festival this year is by reservation only. There will be two sessions, one at 15:00-17:30 and 17:30-20:00 every day. 250 people are allowed to attend each event. Single-use utensils and dining wear will not be provided, please remember to bring your own cutlery!
